Reception for manual choice of carpet. Stemming and crushing; 12 hours of pre-fermentation maceration at 34°C to maximize the work of endogenous enzymes, using selected yeasts; fermentation for a minimum of 10 days with temperature control.
Produced predominantly with the rabigato and viosinho varieties, to which grapes from old vines were added, selected for their structure and complexity. It has an intense aroma and balanced acidity with notes of tropical fruits and white fruits. It is an elegant, fresh and persistent. Goes well with seafood, fish
and light Mediterranean cuisine.
