The grapes are selected before entering the cellar.<\/p>\n<p>They are de-stemmed and crushed in presses for 1 to 3 days before fermentation begins, which takes place in the same presses.<br \/>\nThe grapes are trodden by foot at night and ancient \u201cjacks\u201d are used to lower the blanket during the day.<\/p>\n<p>Once fermentation is complete, the wines are removed to clean stainless steel vats, where malolactic fermentation takes place.<\/p>\n<p>&nbsp;<\/p>\n<p>Aging:<br \/>\nFor 12 months in used 225 French oak barrels and 8 months in small stainless steel vats.<\/p>\n<p>Tasting notes:<br \/>\nAn explosion of aromas, dark red and purple red, with a great concentration of aromas of ripe red fruits, plum and blackberry.
