For the vinification of sparkling wine, the Alvarinho grapes used are carefully selected from vineyards with a lower sugar concentration and fresh acidity.

The high quality must is obtained by fermenting at a controlled temperature to obtain a correct base. After stabilized and filtered, it is bottled for a second fermentation using the Classic Method.

The cellar’s excellent conditions (4.5 mt below ground level) maintain low and constant temperatures for ideal fermentation over several months, thus conserving the characteristics of the Alvarinho variety.

A “degorgement” is carried out to eliminate the yeasts and final bottling.

Tasting notes:
With a citrus yellow color, fine and persistent bubble, the aroma shows the fruit of the Alvarinho variety with persistent flavor and complexity.
Ideal as an aperitif, due to its characteristics it serves to accompany a wide range of cuisine.
