The harvest is done manually in September with the grapes maximum chemical / organoleptic balance, then, it is the soft pressing and the static decantation of the must. The primary fermentation is carried out in steel containers at 18 ~ 19 ° C with
selected yeasts native. The wine remains with a light saccharine residue and then clarified, is taken to the autoclave to acquire foam. The second fermentation takes place at 16 ~ 18 ° C where yeast is used again, a process that takes about 25-30 days, followed by a few days of aging on its lees. Once bottled, it is left to age in the bottle for a few weeks.
Effervescence: Very fine and persistent.
Color: Straw yellow.
Aromas: Typically elegant, clean and fruity.
Flavor: Distinctive and acidic, with a pleasant and balanced dryness.
Temperature to serve: 6 ~ 8 ° C, served immediately after opening.
