TECHNICAL NOTES
Altitude: 500 -600 meters
Climate and Soil: Warm and dry. Large temperature range. Shale.
Harvest: 100% manual for boxes with an average capacity of 20 kg.
Winemaking: Stemming and crushing; bleeding, use of selected yeasts; fermentation for a minimum of 8 days with temperature control. Controlled malolactic fermentation.
Fermentation temperature: 28 – 30 ° C
Fermentation: Stainless steel vats of 10 tonnes with a pump pumping system.
Stage: 100% of the batch aged for a period of 18 months in new French oak barrels.

TASTING NOTES
Color: Closed, almost black, with beautiful violet;
Aroma: Balsamic aroma, with notes of very dense black fruit, well integrated with tobacco and Stage own vanilla Wood;
Palate: In the mouth this wine is dense, with good tannins and a very refreshing acidity of its “terroir” but nothing overlap, a set of a smooth density, long and persistent finish.
