Vinification:
Produced from Aragonez, Trincadeira, Alicante Bouschet, and other grape varieties, planted in the vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of ripeness, they are harvested and taken to the winery, where the technological process begins with complete destemming and light crushing. The grapes are then fermented separately in stainless steel tanks at 27°C, followed by prolonged post-fermentation maceration.
Aged for 12 months in French oak barrels and casks and 18 months in the bottle in the cellars of the Cartuxa Monastery.

This wine owes its quality to the name of the Carthusian monks who, since 1587, practiced a solitary life of prayer at the Monastery of Santa Maria Scala Coeli in Évora. It is the result of a careful selection of grape varieties from the oldest vineyard plots of the Eugénio de Almeida Foundation.
It was first produced in 1986.
