During the month of January after each harvest, Fonseca separates a quality port wines reserve Vintage, very concentrated and powerful. These wines are primarily selected from the company’s own estates and evaluated according to its aging potential.
As Tawny Port wines get older, they become more blondish because release their deposits in the hull instead of doing so on the bottle. The racking contributes to the oxidation process, responsible for this process to gradually decrease the fruit qualities, passing the wine to acquire characteristics of nuts. Wines removed from this great Port wines aged reserve are then batched carefully in order to achieve balance and consistency of style.
