Grapes: Touriga Nacional
Vinification:
All vineyards are divided into plots different and each plot is harvested by hand.
The grapes are selected before entering the cellar. They are destemmed and trodden in lagares for 1 to 3 days before starting fermentation, which takes place in the same vats.
Grapes are trodden by foot at night and the ancient “monkeys” are used to lower the blanket during the day.
Once fermentation is complete, the wines are taken clean to stainless steel vats, where malolactic fermentation takes place.
Aging:
For about 20 months in stainless steel vats and second year French oak barrels, until about a month before bottling.
Tasting Notes:
Touriga Nacional is a noble grape variety whose paternity is claimed today by both the Douro and the Dão. Thick skin, rich in coloring matter, with intense and deep colors. Abundance of primary aromas of wild berries and violets, simultaneously floral and fruity.
Touriga Nacional wines are intense and explosive and have a very high capacity for aging in the bottle.
